
Time is of the essence. Providing healthy, nutritious meals is a struggle. This dish solves both of those dilemmas with a few ingredients and a simple prep plan. It could be frozen for later or thrown into a crock pot fresh to deliver a meal for 4-6 people.
Ingredients
2 garlic cloves, minced
2 tablespoons grated Parmesan cheese
3 teaspoons olive oil
2-3, 3 - ounce chicken breasts (or tenderloins)
3 cups chopped vegetables (I use the Kirkland Normandy Blend from Costco)
Salt and pepper
2 sweet potatoes, chopped
Crushed red pepper if you like more spice.
Slow cooker on high for 4 or low for 6 to 8. I usually throw it on low before work.
You could also bake it. Preheat oven to 400 F. Mix together garlic, cheese and 1 tsp. oil. Pat garlic-cheese mixture onto chicken and place on baking sheet. Toss vegetables with 2 tsp. oil, salt and pepper and place on baking sheet. Cook for 20 minutes, or until chicken reaches 165 F and vegetables are tender.
