Grilled Hawaiian Chicken Freezer Meal



This has to be one of my favorite chicken recipes thus far. The sweet taste of the pineapple and semi-spicy combination is the perfect flavoring for a summer time grilled chicken. The best part is, this marinated chicken can be made in bulk and frozen so you can enjoy it when it's best for you! This served my husband and I and gave me 2 lunches!

Servings: 6

INGREDIENTS

  • 2 pounds boneless skinless chicken breasts

  • 2 tablespoons European Dipping Oil - Mediterranean Balsamic

  • 1 1/2 tablespoons Red Bell Pepper & Garlic Blend

  • 1 teaspoon Rancher Steak Rub

  • 1/2 teaspoon Gourmet Sea Salt: Five Pepper

  • 1 (20 ounce) can pineapple rings undrained

DIRECTIONS

TO FREEZE: Add chicken, European Dipping Oil-Mediterranean Balsamic, Red Bell Pepper & Garlic Blend, Rancher Seak Rub, and Gourmet Sea Salt: Five Pepper to a freezer bag and seal. Squeeze bag to combine ingredients. Freeze.

TO COOK: Thaw freezer bag completely before following the recipe. Drain the juice from the can of pineapple slices into the freezer bag and marinate in the refrigerator. Meanwhile, preheat grill to high heat. Clean and grease the grill grates. When the grill is preheated, remove chicken from freezer bag, and grill for 5-6 minutes on each side until lightly charred and cooked through: 165°F. Grill pineapple slices for 2-3 minutes on each side until lightly charred.
