Cinnamon Apple Protein Pancakes (or Muffins)

Could it be, that there is a Cinnamon Apple Bread that is GOOD for you? YES, it's true!!! This is a flavorful protein breakfast that can be made into muffins or "pie" (since that's all I had for the extra mix) or even pancakes. Endless options for getting a great start to your day!

I got this recipe from a friend and tweaked it with what I had so feel free to do the same!

INGREDIENTS

  • 2 cups instant oats

  • 1 diced apple (I used gala)

  • 4 scoops vanilla protein powder (plus that collagen boost!)

  • 1 container Chobani Apple Crisp Twist (and throw the toppings on after baking!)

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 cup egg whites

  • 1/4 cup of water (to help it blend). I used a Caramel Soy Milk.


Throw everything in a blender and mix. Bake at 350 for 15-20 mins. I filled a full muffin pan and then used a little leftover mix to make a "pie". Make sure you spray the pan first.
